The land of Wait....

Psalm 37:4 "Delight yourself  in the Lord and he will give you the desires of your heart."  1 Thessalonians 5: 15-18 "Be joyful always, pray continually, give thanks in all circumstances, for this is God's will for you in Christ Jesus." These were 2 verses God gave me over a year ago to help me get through the land of wait. Sometime last fall I had a desire on my heart. My husband and I had many conversations. This desire just ddin't make sense. Logic would say NO. But I couldn't shake this desire. So I prayed. I prayed for an open door, a soft heart, a yes or a no, a medical miracle, clarity. But I continued to know that if it was God's will it would happen. And I was okay with the no and even the wait. So I stayed in the land of wait  with no answer and continued to pray. You see I felt our family wasn't complete. I wanted another child. I know a 4th baby is crazy talk. I didn't know if it was through foster care, adoption or natura...

Cheesy Spinached Stuffed Meatloaf

My friend Kiana used to make this in college quite a bit. We lived off campus and needed a few hearty meals that would last a few days with our busy student teaching schedules. Love that girl! Preheat oven to 350 Meatloaf Mixture 1 1/2 lbs of ground round 3/4 cup bread crumbs 1 egg 1tsp salt 1tsp Italian seasoning 1/8 tsp garlic 1/8 tsp pepper Filling 1/2 mozzerella cheese 3 TBSP parmesean cheese 1 10 oz package of frozen spinach (thawed and squeezed dried in a paper towel) Topping 3 Tbsp of Ketchup 1/4 mozzerella cheese Combine meatloaf ingredients. On wax paper roll meatloaf into a 14x10 rectangle. Combine filling mixture in a seperate bowl. Spread filling over rectangle. Leave a 1/4 inch around the edge. Roll up. Seal edges. Place loaf, seam side down on a cooking rack on a foil lined cookie sheet. Bake uncovered for 50 minutes. Add topping and bake for another 10 minutes. Even if you don't like spinach you need to try this one. Its so delicious.

Apple crisp

My mom made this recipe over the weekend and it was sooo good. 1 cup packed brown sugar 6 cups (3# bag) apples sliced 2 cups flour 2 cups sugar 1 tsp cinnamon 2 eggs (lightly beaten) 2 sticks melted butter Preheat oven to 375. In a 13x9 pan pack the brown sugar on the bottom. Arrange the fruit on top. In a seperate bowl stir in flour, sugar, and cinnamon. Add eggs and mix until crumbly. Sprinkle over fruit. Pour melted butter over top. Bake 30-45 minutes or until bubbly and golden.
